Welcome back, Geeky Gluttons, to another episode of Munchies & Minis!
For those just joining us, Munchies & Minis is a live Twitch cooking show where I make a tabletop or Dungeons & Dragons-inspired snack and then paint a miniature. To kick the first season off, I decided to start @RaineRysa‘s #52WeeksofDnD fanart challenge. Last week we all started out in a Tavern with a recipe for Ale & Cheddar Soup. This week’s challenge word was “Map.

I know. I was scratching my head on this one too. That is I was until I realized that the standard tabletop RPG dungeon map looks suspiciously like a waffle. That’s why I decided to make a recipe for brown sugar crispy waffles with two toppings. The first, a blackberry-maple “forest” topping, and the second a honey-ham and cornflake “treasure” topping.

Breakfast Map 4 Dungeon

Makes 2 to 3 waffle maps.

Equipment: Oven, waffle iron, three mixing bowls, wire whisk, spatula, stovetop, skillet, and small saucepan.

Ingredients:

Waffles:
  • 3/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 Tb brown sugar
  • 1/2 tsp kosher salt
  • 1 cup sour cream
  • 1/3 cup vegetable oil
  • 1 large egg, separated
  • 1 tsp ground allspice
  • 1/4 tsp vanilla extract
  • 1/2 cup water
“Forest” Topping
  • 2 Tb unsalted butter
  • 3/4 lb (12 oz.) fresh blackberries
  • 1/8 cup fresh chopped rosemary
  • 1/2 cup maple syrup
  • 1/2 cup water
  • 1 Tb cornstarch
“Treasure” Topping
  • 2 Tb unsalted butter
  • 1 cup diced ham
  • 3 Tb honey
  • 1/2 cup cornflakes

Instructions:

Make the waffles:
  1. Preheat the oven to 200° F. Whisk the flour, cornstarch, baking powder, baking soda, brown sugar, ground allspice, and kosher salt together in a mixing bowl.
  2. In another bowl or mixing cup, whisk together the sour cream, egg yolk, vanilla extract, water, and vegetable oil. Add the egg white to the third mixing bowl and whip until stiff peaks form.
  3. Blend the cream mixture into the bowl of dry ingredients, then fold in the egg white. Let sit for 10-15 minutes while you prepare your toppings and other ingredients.
  4. Heat up your waffle iron and coat with cooking spray. Pour on 1/2 to 1 cup of waffle batter and close the iron to cook until browned.
  5. Transfer waffle to a plate and place in the oven to keep warm. Repeat.
Make the forest topping:
  1. Melt two tablespoons of butter in a saucepan on the stovetop over medium heat. Stir the chopped rosemary into the pan for 30-60 seconds until fragrant.
  2. Add the blackberries, maple syrup, and 1/4 cup of water, then bring to a boil. Mix the remaining 1/4 cup of water with the cornstarch in a separate cup.
  3. Pour the cornstarch mixture into the pan and boil for 6 minutes to thicken. Remove from heat and cover to keep warm.
Make the treasure topping:
  1. Heat the skillet over a medium-high flame on the stovetop, then add the diced ham. Stir to brown all sides.
  2. Season with a pinch of kosher salt and add the butter, then the honey once the butter melts. Once the mixture becomes frothy, remove from heat and stir in the cornflakes. Set aside.
Feed your adventuring party:
  1. Plate the waffles and design your edible dungeons using the blackberry topping as your “forests” or border walls, and honey-coated cornflakes as loot piles.
