Welcome back, Geeky Gluttons, to another episode of Munchies & Minis!

For those just joining us, Munchies & Minis is a live Twitch cooking show where I make a tabletop or Dungeons & Dragons-inspired snack and then paint a miniature. To kick the first season off, I decided to start @RaineRysa‘s #52WeeksofDnD fanart challenge. Far too long ago, we made some Chauntea-inspired candied rose petal adorned crumble for the challenge word “Religion.” The next challenge word was “Dwarf.”

Indeed that means we are at the halfway point of the challenge! When you think of dwarves and food, you probably want to incorporate ingredients that thrive underground, much like the recipes from Daniel Myers’ Dwarven Cookbook. I, however, wanted to reference a beach-dwelling dwarven cleric from D&D podcast The Adventure Zone with this recipe.


A beach dwarf? That’s right, Merle Highchurch from The Adventure Zone loves Pina Coladas, tropical novelty shirts, and long walks on the beach. So what would a beach dwarf eat? 

I figured that Merle’s family would have some traditional recipes from their cave-dwelling ancestors such as honey ham, blue cheese, and mushrooms. But they would then try to make use of fresh, locally-sourced ingredients such as smoked oysters, seaweed, and pineapple.

So that’s why I decided to combine all of these elements into a stuffed mushroom recipe to share with your adventuring party. Make up a batch of these, pair with some fruity, umbrella-topped drinks, and roll some dice to pretend that it’s still summer.

Beach Dwarf Bites

Beach Dwarf Bites

Makes 1 dozen.

Equipment: Oven, stovetop, skillet, mixing bowl, cooking spray, baking sheet, aluminum foil, knife, and cutting board.

Ingredients:

  • 12 large cremini (baby bella) mushrooms
  • 3.75 oz smoked oysters, chopped and oil reserved
  • 1/4 cup shredded honey ham
  • 1/4 cup blue cheese crumbles
  • 2 tablespoons panko
  • 1/4 cup chopped pineapple
  • 4 oz. seaweed salad
  • olive oil
  • kosher salt
  • Caribbean jerk seasoning

Instructions:

  1. Preheat the oven to 400°F.
  2. Carefully remove the stems from the mushrooms and chop finely. Cook in a hot dry skillet tossing lightly for a minute or two until they stop steaming. 
  3. Add a drizzle of olive oil, then the ham and oysters. Cook until the ham is lightly browned then transfer to a mixing bowl.
  4. Blend the reserved oil, breadcrumbs, and blue cheese into the ham and oyster mix.
  5. Line a baking sheet with aluminum foil and coat with cooking spray. Arrange the mushrooms, cavity-side-up, on the sheet. Distribute the filling between the mushroom caps then bake in the oven until the filling is heated and tops are golden brown –about 20 minutes.
  6. Remove the mushrooms from the oven and let cool 5 minutes before topping with pineapple, seaweed salad, and a dash of jerk seasoning. Serve.
